Recipe for Wagyu Meat: Green Onion Salt Sauce

Try this garlicky, slightly sweet sesame onion condiment. It works beautifully with both fatty and lean cuts—especially Gyu-tan (Wagyu Beef Tongue)—adding a nice textural contrast.

Ingredients:

  • 100g white onion or Tokyo Negi (somewhere between a scallion and a leek in size)
  • 30g sesame oil
  • 5g apple cider vinegar (or champagne vinegar)
  • 15g honey
  • 5g soy sauce
  • 5g salt
  • 2g ground black pepper
  • 5g grated garlic
  • 2 pinches Ajinomoto (optional)

Instructions:

  1. Thinly slice the onion or Tokyo Negi.
  2. Stir-fry the onion in sesame oil over medium-low heat.
  3. Once it starts to soften, add the remaining ingredients.
  4. Continue to cook gently until the mixture is fully softened.
    Tip: Avoid high heat—don’t let the sugars burn.
