Try this garlicky, slightly sweet sesame onion condiment. It works beautifully with both fatty and lean cuts—especially Gyu-tan (Wagyu Beef Tongue)—adding a nice textural contrast.
Ingredients:
- 100g white onion or Tokyo Negi (somewhere between a scallion and a leek in size)
- 30g sesame oil
- 5g apple cider vinegar (or champagne vinegar)
- 15g honey
- 5g soy sauce
- 5g salt
- 2g ground black pepper
- 5g grated garlic
- 2 pinches Ajinomoto (optional)
Instructions:
- Thinly slice the onion or Tokyo Negi.
- Stir-fry the onion in sesame oil over medium-low heat.
- Once it starts to soften, add the remaining ingredients.
- Continue to cook gently until the mixture is fully softened.
Tip: Avoid high heat—don’t let the sugars burn.
