Extremely fatty cuts taste better medium (Stephanie I would recommend the snow beef to Medium). I recommend to push down the steak so there is full contact with the pan and that it gets completely seared!

Olive tenderloin cooked in a Josper Grill/Oven combo fed to my 1 year old: cast iron griddle hot, for the sear, then moved to a cooler location to let the smoke flavor penetrate and also slowly cook/bake:

I recommend tasting the fat by itself and not introducing any of the other fats such as canola oil or butter. You can also save the olive beef fat for cooking, it is very tasty :)
(Fat should melt around 90F as opposed to normal beef which melts at 131Farenheit) giving a melt in your mouth sensation.
