Picanha has been a very popular cut. It’s a good value, and has a nice fat cap from the top sirloin butt. It comes in a large format 3.5 to 4.5 pounds. Will shortly post a tutorial on how to cut, skewer, and cook picanha.

quick tip: cut with the grain is the traditional way before skewering
