What Makes Matsusaka Wagyu So Special?

Matsusaka beef comes from virgin female Japanese Black cattle raised exclusively in Mie Prefecture, Japan. These cattle are cared for individually over three or more years—more than twice the lifespan of typical beef cattle—and are fed a customized, high-energy diet that encourages the development of ultra-fine marbling.

Farmers in Matsusaka take extraordinary measures to perfect every detail. Their goal: raise cattle whose fat achieves the lowest possible melting point. The most prized cuts of Matsusaka Wagyu have been measured to melt at just 12°C (53.6°F)—a full 8 degrees lower than Kobe beef. This is what gives Matsusaka its signature buttery, almost creamy mouthfeel.

It’s no surprise then that these cattle are some of the most valuable in the world. In 2002, one Matsusaka cow sold at auction for 50 million yen—over $330,000. But the high prices reflect more than just the way these cows live; they reflect how long they live. Some farmers try to extend their lifespan beyond average in pursuit of even more intricate marbling, despite the risks.
