The Pursuit Farms Mangalitsa Ham & 1000 Day Gouda Baguette

LUNCH: Sandwich Series with Pursuit Farms

Sometimes the simplest sandwiches are the most satisfying. Take a classic ham and cheese, for example—basic on the surface, but with the right ingredients, it becomes something extraordinary.

At Pursuit Farms, we elevate it from everyday to unforgettable. Our hams start with heritage pigs—Mangalitsa, Iberico, or a cross of the two—raised for at least 18 months, three times longer than the industry standard. They’re fed almonds and beer, which adds depth, flavor, and a rich umami to the meat. Then we cure and smoke the ham to perfection.

Layer it with 1000-day aged Gouda, a touch of French Dijon, creamy mayo, and freshly churned butter—and you have a sandwich that’s worth savoring.

Ready to make it yourself? Here’s how:

Yields: 1 Sandwich | Prep time: 5 minutes (Ham at room temp is non-negotiable)

Ingredients

  • The Bread: 1 Traditional French Baguette (High-shatter crust, open crumb).
  • The Protein: 4oz Mangalitsa Pursuitfarms Ham.
  • The Cheese: 2 oz 1000-day Gouda, shaved into translucent shards or chunky broken by hand.

The "Golden Ratio" Spread:

  • 2 Parts High-fat Mayo (or Aioli)
  • 1 Part Sharp Dijon Mustard

Instructions

1. The Acid-Fat Emulsion

Whisk the mayo and Dijon until smooth and pale gold. This specific ratio is designed to provide enough "spine" (acidity) to pierce through the heavy marbling of the Mangalitsa and the richness of the aged Gouda.

2. The Foundation

Slice the baguette lengthwise. Apply the spread edge-to-edge on both the top and bottom. This fat barrier protects the "shatter" of the crust.

3. The Mangalitsa "Ribbon"

Layer the Pursuitfarms Ham loosely. Do not stack it flat. "Ribboning" the ham creates air pockets that allow the fat to bloom and melt instantly on the palate.

4. The Gouda Integration

Distribute the 1000-day Gouda shards over the ham.

Refinement Tip: Press the shards lightly into the spread on the top half of the baguette. This "glues" the cheese in place, ensuring the crystalline crunch is integrated into every bite.

5. The Final Marriage

Close the baguette and give it a firm, even press with your palm. This marries the Mangalitsa oils with the mustard emulsion for a seamless flavor profile.

The Pursuit Farms Standard

  • Temperature: Ensure the ham has sat out for 15 minutes. Cold Mangalitsa fat is a wasted opportunity.
  • No Fillers: No lettuce, no greens. The focus is entirely on the quality of the pork and the aged dairy.
