Chuck has 4 LARGE different muscles in there, we will trim approximately 20%. Great Product for the taste of Wagyu at a more affordable price. These are fattier cuts and blocks made for shabu shabu and “beef-bowl” type cooking. The fat can be rendered down and used as wagyu oil. We will cut available pieces, random sorting of the muscles.
