After traveling all over Spain & Italy, I noticed that much more mature animals were being harvested.
Sometimes upwards of 12 or even 15 years. I spent a lot of time talking with the farmers and understanding the philosophy and it came down to more interesting muscle fiber (and also attempting to be more sustainable as the animals are working animals in a lot of cases).

This is not an ultra beefy type Wagyu. MILD flavor. Smooth mouthfeel.
